Chicken
- 3 to 4 kilo chicken
- Tex-Mex BBQ sauce (ready to inject)
- Tex-Mex spices
- Garlic
- Olive oil
- Salt and pepper

- Mayonnaise
- Sour cream
- Chives
- Dill
- Garlic
- Onion
- Salt and pepper
- Fresh parsley
- Oregano

Preparation
- Prepare the chicken by cleaning it and removing the giblets. Make sure it is thawed if necessary.
- Preheat the charcoal barbecue to a medium temperature.
- Prepare Tex-Mex BBQ sauce by mixing Tex-Mex spices with garlic, olive oil, salt and pepper. Inject the sauce into the chicken, making sure it's evenly distributed throughout the meat.
- Generously brush the chicken with the remaining Tex-Mex BBQ sauce.
- Place the chicken on the preheated barbecue and cook languorously for around 3 hours, turning occasionally for even cooking. Maintain a constant temperature and make sure the chicken doesn't burn.
- Meanwhile, prepare the ranch dressing by mixing the mayonnaise, sour cream, chives, dill, garlic, onion, salt, pepper, fresh parsley and oregano in a bowl. Refrigerate until ready to serve.
- Once the chicken is cooked, remove it from the barbecue and let it rest for a few minutes before carving.
- Serve grilled Tex-Mex BBQ chicken with ranch sauce and your choice of side dishes, such as stuffed potatoes and Greek salad.
