Ingredients

Chicken

  • 3 to 4 kilo chicken
  • Tex-Mex BBQ sauce (ready to inject)
  • Tex-Mex spices
  • Garlic
  • Olive oil
  • Salt and pepper

Ranch sauce

  • Mayonnaise
  • Sour cream
  • Chives
  • Dill
  • Garlic
  • Onion
  • Salt and pepper
  • Fresh parsley
  • Oregano

Side dishes

    Preparation

    1. Prepare the chicken by cleaning it and removing the giblets. Make sure it is thawed if necessary.
    2. Preheat the charcoal barbecue to a medium temperature.
    3. Prepare Tex-Mex BBQ sauce by mixing Tex-Mex spices with garlic, olive oil, salt and pepper. Inject the sauce into the chicken, making sure it's evenly distributed throughout the meat.
    4. Generously brush the chicken with the remaining Tex-Mex BBQ sauce.
    5. Place the chicken on the preheated barbecue and cook languorously for around 3 hours, turning occasionally for even cooking. Maintain a constant temperature and make sure the chicken doesn't burn.
    6. Meanwhile, prepare the ranch dressing by mixing the mayonnaise, sour cream, chives, dill, garlic, onion, salt, pepper, fresh parsley and oregano in a bowl. Refrigerate until ready to serve.
    7. Once the chicken is cooked, remove it from the barbecue and let it rest for a few minutes before carving.
    8. Serve grilled Tex-Mex BBQ chicken with ranch sauce and your choice of side dishes, such as stuffed potatoes and Greek salad.
    9. Enjoy this delicious meal with your guests!
