What Are the Different Types of Convection Ovens?
There are two types of convection cooking technologies, each with its own design:
- Standard convection: also known as fan-assisted or forced-air convection—uses a fan at the back of the oven to circulate hot air produced by the traditional heating elements, typically located at the top and bottom. This airflow improves heat distribution compared to a conventional static oven.
- True convection: sometimes called European convection—goes a step further by adding a circular heating element around the fan. This heats the air before it’s distributed throughout the oven, providing a more consistent and stable temperature.
